Ingredients | Smoked Breakfast Sausage1 tablespoon olive oil1 medium onion, 1/2-inch dice1 clove garlic, minced1 tablespoon tomato paste1 (14 ounce) package Hillshire Farm® Smoked Sausage, cut into 1/4-inch slices1 (28 ounce) can diced tomatoes4 cups chicken broth1 (9 ounce) package fresh cheese tortellini1 teaspoon salt¼ teaspoon pepper2 cups baby spinach1 tablespoon Parmesan cheeseDirectionsHeat oil in a large pot over medium heat. Saute onion and garlic in oil until soft, about 5 minutes. Stir in the tomato paste and smoked sausage and cook for an additional 3 to 4 minutes.Add the diced tomatoes, broth, tortellini, salt and pepper and bring to a boil. Reduce heat and simmer gently for 5 minutes, then stir in spinach and cook for an additional 3 to 4 minutes.
